Makes 1â…” cups (400 ml)

  • ¼ cup lemon juice
  • 2 teaspoons grated lemon zest
  • 2 teaspoons Dijon mustard
  • ½cup olive oil
  • 1 tablespoon red wine vinegar
  • 2 tablespoons parsley, finely chopped
  • 2 teaspoons chives, finely chopped

Method

Step 1

Place all ingredients in a medium jar with a tight-fitting lid, and shake to combine.

Step 2

Can keep in the refrigerator for up to 5 days. Shake well before serving.
